Ripe mangoes are rarely eaten by Thais. Rather they prefer unripe fruit, which have an acidic and fresh taste. The ripe yellow mangoes of the Nam Dok Mai variety are well-known beyond the borders of Thailand for their full flavour and incredible sweetness. Salads similar to papaya salads are often made using the immature fruits. The mild acidity of the immature mangos is also used to give fish dishes a subtle, fresh note.
